CINNAMON

Through the ages, cinnamon has been a symbol of wisdom. Cinnamon has a long
history of use and was first used in Egypt and parts of Europe from 500 B.C. Cinnamon
and its oil was used medically and for perfume. At one time, it was used in sacrificial
rites and in love portions. Cinnamon was known to be an astringent, stimulant and to
aid digestion.
Cinnamon is native to Sri Lanka and India. It grows in tropical forests and is cultivated
in tropical regions of the world. Cinnamon is the inner bark which is propagated from
cuttings and every second year, during the rainy season young trees are harvested
from the young trees.
For cinnamon, the holiday season is its peak usage time. The holidays are the time of
cinnamon spiked-drinks, cookies, cakes, pies and breads. Cinnamon is a warming
spice which is useful during this season of short, cold days. There are very few spices
that blend well both in savory and sweet dishes. Through the ages, cinnamon has
meant protection, health, strength and courage. What better time of the year than to
settle down with a cup of hot spiced cider?

Hot Spiced Cider
Pour into a kettle a gallon of apple juice or cider. Set on the stove to warm. Place in a
muslin bag 2-3 cinnamon sticks, 2 nutmeg nuts and 3 to 4 whole cloves. Let simmer on
the stove for at least an hour. Optional to add slices of oranges. Serve warm.
